Yummy Gluten-Free Energy Bars/Cookies

One thing that has always stopped me at the grocery store from buying healthy, organic, gluten free food is the price! I have been on a hunt to find recipes on Pinterest as well as family and friends that will give me the taste and health benefits without breaking the bank.


Healthy food shouldn't require you to take out a lone or sacrifice taste!

Are you as excited as I am to get going on this recipe and learn how easy it is to make them!


Healthy Breakfast bar/cookie recipe


There is only 4 ingredients in this recipe which is why I was drawn to it, less extra stuff in my food and easy to make, especially when you are short on time.


So let's get started! You will need:

2 bananas

1/2 cup peanut butter

2 cups rolled oats

1/2 cup frozen blueberries


Get a medium sized bowl and mix the first three ingredients until well blended, then add in the frozen blueberries ( you don't want them to thaw or they will make these bars/cookies purple).

Next using a tablespoon get a good sized scoop of the dough and roll into a ball, place on the cookie sheet and flatten them with your hand, if you want to make them shaped like a bar don't squish them with your hands just elongate them to a bar shape( I preferred the cookie shape I love cookies). You should get roughly 12 bars/cookies it all depends on the size you make them. Put them in the oven and bake them at 350 degrees for about 10 minutes, give them a few minutes to cool and enjoy!


As you probably noticed there is no sugar or flour involved in making these cookie/bars, the only sugar you really need for flavor comes from the blueberries and the banana. You are getting protein from the peanut butter and rolled oats help fill you up and keeping you going through the morning. You can't get healthier or cheaper than that. Give them a try and see for yourself how good healthy can taste.
